The best Cantonese beginners’ book I’ve found so far (and I’ve used quite a few) is called No Sweat Cantonese. It’s easy, helpful and up to date, and the accompanying CD is great. I wouldn’t recommend the English-Cantonese dictionary as it’s idiosyncratic and full of errors. But I don’t know of any other paper dictionary that’s in print. I guess the market has been taken over by the electronic dictionaries.

Yes, I’m familiar with those “Teach Yourself” books and they are good ones. Regardless of which book or program you choose, be sure that it includes audio lessons like those do. Cantonese is nearly impossible to learn if using just written or pinyin instructions. There are also some good online resources for helping to learn Cantonese like http://www.learnchineseez.com and others.
